The quick answer
Bangkok's all-you-can-eat scene ranges from 200 ฿ mookata grills where locals eat to hotel seafood buffets with lobster and king crab.
On a budget, try a mookata (Thai grill-and-hotpot) or a mall shabu chain such as Shabushi. For a view, Baiyoke Sky serves buffets 76–82 floors up; for premium seafood, the InterContinental's Espresso runs a Wednesday–Sunday dinner buffet.
Most buffets have a 90–135 minute limit and charge for leftovers, and '++' prices add about 17% for service and VAT.

What each kind of buffet is and how to eat it without paying for leftovers.
Mookata
A domed metal pan sits over charcoal or gas. You grill pork and other meat on the dome while broth in the ring around it turns into soup from the dripping juices.
How it works: Fill plates from the counter, or order from the table at some places. Grease the dome with pork fat first, and cook the vegetables and noodles in the broth. Most places open around 5 pm and stay busy late.
Shabu / Suki
Each person or table gets a pot of broth for cooking thin-sliced meat, seafood, vegetables and noodles. Suki is the Thai version, usually eaten with a spicy-sour dipping sauce.
How it works: Pick a broth and a price tier, then take items from the conveyor belt or order on a tablet. Chain buffets usually run about 90–135 minutes.
Yakiniku / Korean BBQ
You grill marinated or plain beef, pork and seafood over a grill at your table. Higher tiers add better cuts such as wagyu.
How it works: Choose the tier before you order, since everyone at the table usually has to take the same one. Order in small rounds from the tablet or menu.
Japanese / Sushi buffet
Nigiri, sashimi, teppanyaki, fried dishes and desserts. Cheaper tiers cover sushi and snacks, and top tiers add premium seafood.
How it works: Prices are usually ++ (service and VAT extra). Children are often priced by height.
Seafood buffet
Spreads built around river prawns, oysters, crab and squid, from mid-range restaurants up to hotel spreads with lobster and king crab.
How it works: Hotel seafood nights often run only on certain days, so check the schedule and book ahead.
Hotel buffet / brunch
Large international buffets in hotels: Thai, Western, Japanese and Chinese stations, carving, desserts, and sometimes drink packages.
How it works: Prices are usually ++. Booking apps and early bookings are often cheaper than walk-in rates. Weekend brunch and dinner fill up first.
