The quick answer
Pattaya's buffets go from 200–300 ฿ mookata grills and Jomtien seafood grills to mall Japanese buffets and weekly hotel seafood nights.
Nai Por Buffet is a local mookata near the bus station, Jomtien Thale Pao grills crab and prawns at the table, Oishi Eaterium at Central Festival is a 1 h 45 min Japanese buffet, and Big Fish at Siam@Siam runs a four-hour seafood buffet Wednesday to Sunday.
Hotel seafood nights run only on set days, so book ahead, and check whether drinks are included.

What each kind of buffet is and how to eat it without paying for leftovers.
Mookata
You get a domed charcoal pan at your table. Meat and seafood grill on the top while broth collects in the moat around the edge and turns into soup. You take raw pork, chicken, seafood and vegetables from a self-service counter.
How it works: Put a strip of pork fat on the dome first so nothing sticks, and check whether soft drinks are included or cost extra.
Shabu / Suki
Each person or table gets a pot of simmering broth. You cook thin slices of meat, seafood, vegetables and noodles in it. Some places offer a grill-plus-hotpot combination.
How it works: Pick a broth first, then cook small batches so the broth stays at a boil.
Japanese buffet
Mall chains in Pattaya use a time-limited format. You order sushi, sashimi, hot dishes and desserts from a tablet or menu, and the kitchen brings them to your table.
How it works: Check which price tier includes sashimi, and order in small rounds because the clock is running.
Seafood buffet
Prices range from local open-air grills with crab and shellfish to hotel spreads with oysters, prawns, lobster and grill stations.
How it works: Hotel seafood nights often run only on certain days and need a booking.
Hotel international buffet
Many resorts hold one or two dinner buffets a week, usually on Friday or Saturday. They mix Thai, Western and seafood dishes, often with live music.
How it works: Look for '++' after the price, which means 10% service charge and 7% VAT are added. 'Net' means the price already includes them.
Halal buffet
A small number of Pattaya buffets are listed as halal. They serve shabu and BBQ without pork.
How it works: Confirm the halal status with the restaurant on the day if it matters to you.
